Here's the new and improved zucchini protein muffin recipe:
1 cup whole wheat flour
1 cup whey protein powder
3 tsps baking powder
1 tsp coarse salt
3 1/2 tsp cinnamon
1 1/2 cups unsweetened applesauce
1 freshly grated zucchini
1 tsp vanilla extract
Preheat oven to 350 degrees
- Sift together flour, baking soda, baking powder, salt and cinnamon into a bowl.
- In a separate bowl stir together applesauce, Splenda, zucchini and vanilla. Make sure it is fully combined.
- Carefully pour flour mixture into applesauce mixture, stirring until completely combined.
- Pour into muffin cups – bake 25 minutes for 12 muffins
Makes 16 muffins at 46.5 calories each!
*Original recipe made 19 muffins, however, I used more flour and less protein powder then, which affected my yield*
